Paleo and Weight Watchers Chicken and Roasted Vegetable Recipe

Image
Sometimes you just want something quick and easy to eat. You don’t want to spend hours at the stove chopping, preparing and then cooking. This chicken and roasted vegetable recipe couldn’t be easier! You just chop it up, pop it in the oven and wait. It’s a high-protein and high-fiber meal, low in calories and perfect for the paleo, Atkins, and Weight Watchers diets. Ingredients: Two chicken breasts One small red onion Two handfuls of spinach Four carrots Two handfuls of chopped mushrooms Really, you can choose the amount of veg you want to put on, but this is a guide for a meal that serves two. Method: Preheat the oven to 220C. Wrap the chicken in foil and place in the oven. Leave for 20 minutes. Chop the vegetables. Place them on a baking tray and brush over with olive oil. After the chicken has been in for 20 minutes, add the vegetables to the oven. Cook for another 30 minutes. This should allow the chicken to cook all the way through...

Weight Watchers Pancake Recipe: Your Pancake Day Sorted!

Image
Pancake Day is on Tuesday. I can’t believe it’s here again already. Pancakes are a dieter’s worst nightmare. They’re full of eggs, milk and flour! While eggs are fine, the milk and flour can be problematic; and not just for weight loss. Some people have gluten intolerances, while others can’t stomach the dairy. I’m here with my favourite Weight Watchers pancake recipe. You need just two ingredients: Bananas Eggs I suggest playing around with the balance of both to find a texture and taste that you prefer. I like using two eggs for each banana, but others find they prefer it the other way round or just doing one egg per banana. The method is simple. Mash the banana, add the beaten egg and you have your Weight Watchers pancake batter. Not only will pancake day be guilt free (depending what you put on top, of course!) but it will have minimal mess. As for the toppings, I love mixed berries and a tiny bit of maple syrup, but the choice really is yours. ...

100 Day Challenge Days 24 and 25: A Weekend of More Baking and Lack of Internet

Image
This weekend has been busy for me. Sometimes I have no idea where the time goes, and Sunday was definitely like that! I spent the whole day pretty much out of the house. When I was in, I was busy doing something! But that didn’t stop me from tracking my food! Not at all. After the 1lb weight loss on Saturday morning, I was more motivated to stay on track and make sure I continue with the 100 Day Challenge. And I did just that over the weekend. I’ve finished the weekend with 34 weekly pro points left. I’m happy with that as it is plenty for the next five days. And I fully plan on using them sparingly over the week. Today is when a few more will be eaten with the plan for dinner, but I know I can be good the rest of the week. My cover classes have finished this week, since I can’t do Thursday. With it being election day and as I’ve put off so many meetings lately, my Thursday quickly became packed with things to do. And I can’t put some of them off any longer. It’s a...

Diet Coke/Diet Fanta Chicken

This has been a recipe that I’ve loved making. I don’t do it often, because I’m not the one that cooks that much in the house. However, it’s a go-to one when I need something quick, simple and weight loss friendly. I do really enjoy diet coke chicken, but someone suggested substituting the coke with Fanta, and I’ve got to admit that it’s gives it that little extra tangy flavour. If you’re looking for something to change up your recipes, it’s an easy alternative. So, here’s the recipe I follow for my diet coke/diet Fanta chicken. It has a bit of a sweet and sour taste, and works perfectly with rice or pasta. Ingredients:  500g chicken breast, sliced 1 onion, diced 5 tbsp passata 1 can of diet coke/diet Fanta (330ml if you have a bottle) Method: Heat a large pan and add a bit of oil Throw in the chicken and onion and cook until it starts to colour Add the rest of the ingredients and allow to boil Reduce the heat and simmer. The sauce will thicken and ...
